I am doing the All You Grocery Contest and I have discovered when it comes to being frugal, my heart (and husband) are very very happy! We are taking a little trip soon and I wanted to get your ideas about cooking food on the go. We will have a kitchen to cook our meals in and my husband’s parents have offered to take us out one night (which is allowed for the contest). I am thinking spaghetti with marinara the first night because it is fabulous and I can bring it in a bag. I’ll probably go to the grocery store and get some items for 3 other meals. What should I cook? What’s easy, inexpensive and yummy?

    We live byu the jumbo baked potatoe for a quick meal. Or minute rice :)

    An easy quick meal for us are Taco’s! I brown the ground beef (ground turkey for healthier taco’s) add BBQ sauce and have everyone add their own cheese, lettuce and tomatoes.

    We always do breakfast for dinner one night while on vacation…very few leftovers and can be as expensive or as cheap as you want it to be.

    How about a bag of stir fry veggies(some at Aldi have meat for $4.00). Serve over brown rice. Cut some fresh tomatoes, cantaloupe, and or cumcumbers to have with it. A box of ice cream on a stick is a good dessert. Have fun.

    Are you driving? If you had room in your car, you could bring a crock-pot. That’s frugal cooking PLUS you wouldn’t have to get back to your place early to cook!

    One of my faves is some frozen chicken in the bottom of the crock, with a jar of salsa, can of corn, can of black beans on top of it. Serve over rice or in tortillas.

    Brown rice (the instant stuff from Uncle Bens is good), black beans (canned and rinsed well), salsa of choice, top with shredded cheese. If you want a little meat, add either some canned chicken or meat from a rotisserie chicken from the grocery store. You can eat the leftover chicken for lunch the next day.

    Breakfast burritos are great anytime too. Scrambled eggs, cheese, salsa and tortillas. Add sausage if you want some meat.

    These are both great meals that are real food, can be made quickly and with only a microwave and have gotten me through more than my share of nights when I’m traveling and working 2nd and 3rd shift.
